The Freycinet is a cashew based cheese that is made in a 600g round and aged before slicing and vacuum packing. Made in the style of the classic Fleur du Maquis, this cheese is rolled in a blend of aromatic Tasmanian botanicals such as kunzea, pepperberry leaf and saltbush. The paste is creamy white in appearance and it has a semi-firm sliceable texture. The delicate herbaceous flavour complements the lactic tang of the cheese.
