The Gladstone is a cashew cheddar that is made in a large wheel and aged before slicing and vacuum packing. It is creamy white in appearance with a firm sliceable texture. It has a buff coloured natural rind. Cold smoking with Tasmanian applewood enhances the inherent nuttiness of the cheese and adds a slight fruity note which is balanced by some lactic acidity.
